It's obviously been a while since I've posted to this blog.  There are lots of reasons. Lots of excuses.  But now,  I'm back. And hopefully frequent.



Going forward there's a whole new twist on my posts....we've gone Gluten Free.  I'm already Dairy Free and have 1 child who can't take much lactose, now I'm adding Gluten Intolerance to my list and early stage Celiac to the kid list.

1# ground beef
1 1/2 cups spaghetti sauce

1/4# olives, pitted and sliced
2 Tbsp parmesan cheese

1)  Preheat oven 350 degrees.
Spray 2-qt baking dish with nonstick spray.   Cook noodles as directed.  Rinse and drain.

Directions:

1 pkg of refrigerated biscuits
1 apple, peeled and cut into small pieces
2 T brown sugar
1 T lemon juice
1 t apple pie spice (or 1/4 t of allspice, cinnamon, ginger, &amp; nutmeg)

This is one of my favorite dishes. Ever. 



I had my first meal of lamb when I was in Australia and I was immediately hooked. I love the rich, tender taste of the lamb mixed with the aioli mint sauce. I'd fix this once a week if my husband liked lamb as much as I do. He loves this roasted lamb, he's just not a fan of lamb in general, so I only get make it about 4 times a year. Mix together:
     3 cups flour
     2 cups sugar
     4 Tbsp cocoa
     2 tsp soda    
     A good dash of salt



Make a well in the center of the dry ingredients and add:
      2 eggs

No other cookies says "Christmas" to me than these delicious molasses cookies.  My mom made them every year while I was growing up, and I love, love, love the smell of molasses cookies filling the house. Now I get to bake these for my family.

This is a family favorite recipe.   It was the meal that was always requested when we would come home for the weekend in college.   It isn't the quickest meal to make, but definitely well worth it and kids love it! Yes, this is dairy-free!  No one could believe it when I said it had sweet potatoes and no dairy. Here's the secret: never tell anyone the ingredients until after they eat it -  - just present it as a "cheesecake".
